Today I made a pizza with all the leftover cheese from Christmas. Beautiful welsh soft gooey things, hard things wrapped in garlic leaves, and truffles wrapped in the center.
Friends poo-poo’d it. It will be too greasy. The base will steam in cheese and go soggy. Instead it was delicious. I made a béchamel base for it. Utterly delicious. Gooey and creamy and perfect in every way.
If a four cheese is a quattro formaggi, this must have been the *dieci formaggi*.
